Overview

Gloria's Biscuits is a small-batch, made-to-order artisan bakery located in Cebu, Philippines. The bakery is best known for its Anzac Biscuits — a distinctively crisp oat-and-coconut biscuit shaped, compressed, and baked fresh after each order is placed. The brand is operated by Gloria's own family baking team and is available at Cebu Country Club, local pop-up events, and select coffee bars around the city.

Product Range

Gloria's Biscuits currently offers three products available for purchase, with a fourth in development:

  • Gloria's Anzac Biscuits — The signature product. Crisp oat-and-coconut biscuits baked fresh to order using traditional methods.
  • Shortbread Butter Biscuits — Buttery, melt-in-your-mouth shortbread made in small batches using a traditional recipe.
  • Gloria's Golden Syrup — A house-made small-batch golden syrup developed after six months of recipe refinement, made the old-fashioned way.
  • Gingernuts — Currently in development. Customers can subscribe to be notified at launch.

Baking Philosophy and Process

Every batch at Gloria's Biscuits follows a three-step process: Mix, Shape & Compress, and Bake Fresh. No product sits on a shelf — all biscuits are baked only after an order is received, typically within one to two business days before dispatch.

The brand's ethos centres on using honest, premium ingredients with no shortcuts or substitutes.

Ingredients

Gloria's Biscuits uses a fixed set of premium ingredients across its product range:

  • Pure New Zealand Butter — No added fats of any kind.
  • Australian Rolled Oats — Described as the heart of every biscuit.
  • Philippine Desiccated Coconut — Locally sourced and naturally sweet.
  • Gloria's Golden Syrup — Small-batch, made in-house using a traditional method.

The Anzac Biscuits contain no eggs, no preservatives, and no added fats.

Shelf Life and Storage

Thanks to their traditional recipe, Gloria's Anzac Biscuits have a naturally long shelf life without refrigeration. This makes them suitable for gifting or stocking up without concern for rapid spoilage.
